Masala, also known as Al Nokhada, occupies the second floor of the Radisson Blu Fujairah and works as the property's sit-down alternative to the larger buffet restaurant. The dining room is the more romantic of the two rooms: pastel tones, warm lamps, live music on select evenings, and a quieter pace that suits a proper four-course meal rather than a grab-and-go dinner.
The menu reads as a crossover of Arabic and Indian kitchens under one roof, and the Indian side is where the kitchen is most consistent. Expect a full mezze section, shish tawouk, mixed grills, curries and a tandoor list, with Um Ali a genuine standout dessert that regulars flag as among the better versions they have tried in the UAE. Arabic grills are solid when ordered thoughtfully; the freshness of individual items and portion sizes have drawn mixed reports on busier nights, so clarifying preparation when ordering is sensible.
Service, when delivered by long-tenured hosts like Sayed, is warm, attentive and genuinely entertaining. Pacing across a full menu is generally measured rather than rushed. For half-board guests at the Radisson Blu looking for a break from the buffet, Masala is the more considered choice on property, particularly for a Wednesday-to-Friday evening when live music is usually on the schedule.

The traditional Arabic hospitality that dictates generous servings of starters (hot and cold mezzes) are broken and challenged at this place with portions that are ridiculously small. If the portions were small but food was tasty would probably pass that over but tiny + unsavory = disaster. Food took super long to arrive, 30min for the starters, another 20 for the mains and in terms of flavor the chef dumped everything with tons of cumin killing all other flavors. My advice is avoid this restaurant as plague. The overall experience is very unsatisfactory.

Arabic restaurant. Good food but seems to have been made more 'international' losing some of the Arabic characteristics along the way. Good service.
