Amala is the Indian fine-dining room at Jumeirah Zabeel Saray on Palm Jumeirah, a quietly theatrical restaurant that has become one of the city's most repeatedly praised regional kitchens. The interior runs rich and considered - jewel-toned textiles, intricate carved panels, amber pendant lighting, and tables set with the particular attention to linen and silverware the Jumeirah group brings across its dining rooms - and the atmosphere is unhurried, designed for a properly paced evening rather than a turnaround.
The kitchen's strength is its regional range, executed with a sure hand. A pre-set sharing menu walks guests through the wider map of Indian cooking and is the approach most regulars default to; the thali is built as a guided introduction across flavours, spice levels, and regional styles. Individual ordering covers the full spread of tandoor, slow-braised curry, dal, and biryani, with the kitchen equally attentive to vegetarian tables - a hallmark of a serious Indian restaurant rather than a gesture - and visibly careful with allergies and gluten-free requests across both mains and desserts. Close with a traditional mithai platter or a modern plated kulfi, and pair with a wine programme thoughtfully selected for Indian spice rather than defaulted to a generic list.
Service is the restaurant's genuine signature. The floor team is long-tenured, remembers returning resort guests across visits, and paces dinner without ever driving the check. Menu guidance reaches into the regional provenance of dishes, which lifts the evening for first-time guests and remains welcome for regulars; children and family tables are handled with the same considered warmth. Occasion dinners are marked with restraint rather than ceremony.
Pricing is set as a premium fine-dining hotel restaurant, with half-board guests finding real value and à la carte tables paying for the ambition and the polish. For a carefully rendered Indian dinner on the Palm, with service of a standard that rewards a long evening, Amala is one of the strongest Indian bookings in the city. Reservations are worth making for weekends and resort-peak periods.

Amala is the best Indian restaurant I have ever been to! Their food and service is always 10/10. Whenever we come to Dubai we are never disappointed. The service from Ali and Banwari is immaculate and so professional. They always ensure we have the best service and experience throughout our meal. Highly recommend when you come to Dubai!

We dined last night at Amala, and were lucky to get a reservation on the night. Shubham looked after us and was fantastic, he recommended us what to order and all choices were brilliant. Would thoroughly recommend going.
