Description

Spectrum is the all-day buffet restaurant at Fairmont Ajman on the Corniche, a comfortable, family-oriented room that handles breakfast, lunch and dinner for hotel guests and weekend visitors alike. The spread stretches across four broad cuisines - Arabic, Asian, Indian and Western - with live egg and grill stations, a proper salad section, fresh-pressed juices and a dessert selection. Breakfast is the strongest service, with freshly squeezed juices, cut fruit, shakshouka, yogurt with homemade fruit puree and hot dishes from both Western and Arabic kitchens. The room is well suited to families: children are looked after with free sides of fries, pizza, nuggets and ice cream, and the kitchen is notably willing to accommodate allergies and special requests, with chefs coming out to cook something bespoke when needed. An outdoor terrace with a beachfront view opens in the cooler months and is worth asking for. Service is the standout across a long run of reviews, with a core floor team that regulars return to greet by name. A couple of practical notes. The range, while solid, is narrower than some other Fairmont buffets in the UAE, and dinner replenishment can lag once the rush settles in, so arriving at the start of service is the more reliable bet. Dish labelling for allergens is minimal, which is worth flagging to staff in advance. Best approached as a dependable, hospitable buffet for families and hotel guests rather than a destination for the food alone.

8 of us went for dinner here for a friend's birthday. Drinks took a while and orders incorrect when they did come. Food is nice and served buffet style. The main problem was our waiter, when he got things wrong he tried to argue with us for example, 'telling me I definitely ordered a coke when I'd ordered a diet coke' rather than just correcting the order. He refused to accept it was a mistake and kept trying to push the wrong order on us. When we asked for the bill to be split between the four couples, he brought it back split in three and when we corrected him he kept rolling his eyes at us and being argumentative as if this was our fault. He then disappeared for 30 mins to fix this. We had to keep asking other members of staff if they could follow up with the bill. I wouldn't go back here. Stayed in the hotel on a HB basis so buffet was included. Overall restaurant offer was good, with a decent choice and decent quality. Not in the scale or variety as other Fairmont Hotels in UAE but did everything well. Staff were incredibly helpful especially as our two year old has loads of allergies so they cooked something just for him. One miss was the food labelling was non existent . You would need to find and ask the chef if there were any major allergens like nuts in a dish, or if the dish was vegetarian. Overall I would recommend it.
