Rosmarino is the Italian restaurant inside the Ajman Hotel on the Corniche, a bright, elegant room with an open kitchen, live music in the evenings and a distinctly European feel. The cooking is overseen by chef Massimiliano, whose presence in the dining room is a defining part of the experience, and the menu reads as a carefully curated tour of the country rather than a generic hotel Italian: carpaccio with truffles, a broad antipasti and salad selection, soups, a full pasta range including orecchiette alle cime di rapa and spaghetti frutti di mare, pizzas and calzones, a risotto alla Milanese, and mains such as beef fillet with porcini mushrooms. Presentation is polished without being fussy, ingredients are treated with confidence, and desserts - the tiramisu and affogato in particular - are a high point. Service is consistently warm and attentive, with familiar names from the floor team cited repeatedly by returning guests, and the chef is happy to improvise off-menu for regulars. Live vocalists on select evenings add to the occasion without overwhelming conversation. The room is suited to couples, quiet business dinners or a special evening with family. Pricing is in line with the hotel tier rather than the neighbourhood, but the quality and hospitality justify it. Book ahead for the end of the week and aim to arrive with time to linger; the kitchen closes on schedule, and the experience is best savoured unhurried.
