Gioia is the Italian room at Fairmont Ajman, set beside the pool with an open kitchen at its heart and a terrace that draws most diners in the cooler months. The dining room is intimate rather than grand, with chefs visible at work and the interactive element extended to the floor: pasta is tossed at the table in a hollowed parmesan wheel, and the staff have the confidence to adjust dishes off-menu when the kitchen is quiet. It reads as a considered hotel restaurant rather than a destination scene, which suits the cooking.
The menu is compact and leans on classic Italian comfort with a few modern flourishes. The burrata with black truffle and the rocket salad with pear and goat's cheese are the starters to order, while the lobster arancini and a properly seasoned beef carpaccio also hold their own. Among the mains, the gnocchi with gorgonzola cream sauce is a standout, the seafood linguine and tagliatelle are generously dressed, and the Quattro Formaggi pizza draws returning diners on its own. The T-bone and fillet steaks are handled with care, and the Chilean sea bass is one of the quieter highlights. House-baked breads arrive with a memorable porcini butter, and desserts - tiramisu, creme brulee, a house Catalan cream - land the meal cleanly. Dietary requests, including vegan adaptations, are taken seriously rather than tolerated.
Service is the consistent strength: waiters like Yousef, Ganga and Wilfred are named repeatedly for the kind of attentive, warm floor work that a hotel Italian often lacks. A few caveats are worth flagging honestly. Pricing sits at resort level and can feel steep against the cooking when the room is quiet; pacing occasionally slows on busy weekend nights; and the odd dish (a thick-crust pizza, an overcooked pasta) suggests the kitchen is not flawless. For a measured Italian dinner in Ajman, particularly on the terrace at dusk, Gioia is nonetheless one of the more polished tables on the Corniche.

There are eight different restaurant and lounges guests can choose from at Fairmont Ajman, and Gioia was our first pick. This classic Italian eatery features an authentic menu, with everything from traditional antipastas, to oven-cooked pizza and delightful desserts. Its modern day twist and interactive open kitchen adds to the impeccable atmosphere, and was by far one of our favourite places to eat at the resort. Head waiter and chef understood a vegan diet immediately and offered several possibilities of altering standard menu items to suit. Result - the best meal we had in the UAE - a really tasty mushroom risotto and a really fresh salad. Fast, efficient and very attentive service and a lovely meal.
